So I use Microsoft Word when writing my short stories, thinking about turning my short stories into a book every time I try to make a PDF all my work gets messed up, how can fix it or keep it from happening?

I am writing a short stories book, but I discovered that every story may pass 30 pages or sometimes 50, with 212 words for each page. What can I do? Is it normal? That’s two questions. What can I do? Is it normal? Rules say to ask only one. I’ll respond to the first question. I personally like to write more than required. That allows me to cut out the fluff and still have enough solid story left over. I assume you know the required word count for short stories. For the first draft, just write. Then go through and cut what seems like fluff. Some stories will be longer than others. At least, that has been my limited experience with short stories.
